SLI/Crossfire vs. higher end GPU?

I was wondering what are the advantage and disadvantages between getting 2 lower powered GPU (say $100 for each GPU) vs. getting one higher end GPU (say around $200); besides the higher PSU requirements.

I am not a hardcore gamer by far, I enjoy playing games like Oblivion, Fallout 3, and Mass Effect; and I am getting ready to play Dragon Age and Mass Effect 2.

Usually the higher end card will outpreform the cards in SLI or Crossfire.

I would go for a single more powerful video card myself. Because you have the option later to add another one for even more performance.

Thanks Razear and Rodney. I am taking your guy's advice and going with a single more powerful DirectX 11 card, then in about 1 year to 18 months, I'll add a second one.
